Recipes from the Beekeeper: Honey Spice Cookies

When we started to keep bees we were so excited to see what we could do with the honey harvest (at the time it was 2 hives). We found lots of recipes to use honey with but the best one was from Nick's grandma Beulah. Nick's grandpa Henry loved these cookies that she made and would often have them as snack with a hot cup of tea.





Honey Spice Cookies

  • 3/4 cup shortening

  • 1 cup sugar

  • 1 egg

  • 1/4 cup honey

  • 2 tablespoons buttermilk

  • 1 teaspoon vanilla

  • 2 1/4 cups flour

  • 2 teaspoons baking soda

  • 3/4 teaspoon salt

  • 3/4 teaspoon ground nutmeg

  • 1 teaspoon ground cinnamon

  • Milk + sugar to dip and roll cookies in

Cream shortening and sugar, blend in egg, honey, buttermilk, and vanilla. Beat until fluffy. Sift together dry ingredients. Add to the wet ingredients and mix well. Chill dough. Form dough into small balls. Dip one side in milk then in sugar. Place on a greased cookie sheet, sugared side up. Bake at 375 degrees for 8-10 min. Let stand briefly before removing from cookie sheet.
